SIMPLE GOURMET GRANOLA (NO THAT'S NOT AN OXYMORON)

For the perfect breakfast, we’re sharing Honey's favourite granola recipe with you, an adaptation from one of our go-to recipe sites, My New Roots.
This recipe makes quite a large batch, but it lasts well and is delicious served with yogurt and fresh fruit. It also makes a great gift for family and friends - package it up nicely in a large jar and you're good to go!
RECIPE
METHOD
1. Preheat oven to 175°C
2. In a small saucepan over low-medium heat, whisk oil and honey together.
3. In a large bowl combine oats, almonds, coconut, and sea salt.
4. Pour oil and honey mixture over dry ingredients and stir very well to coat. Place on a baking sheet. Bake for 10 minutes; remove from oven and stir. Place back in oven but remove and stir every 5 minutes or so until the oats are golden brown (approx. 25-30 minutes).
FLAVOURS:
To flavour our granola we added vanilla bean and cinnamon but you could also add cardamom, orange zest, lemon zest cocoa powder or cocoa nibs for a chocolatey twist.
NUT ADDITIONS:
You can add almost any nut combination you like – pecans, cashews, macadamia nuts, pumpkin seeds, etc.
DRIED FRUIT (ADD AFTER BAKING) ADDITIONS:
Dates, figs, cranberries, raisins, cherries, goji berries, mulberries, apricots, etc.
SUPERFOODS (ADD AFTER BAKING):
bee pollen, cacoa nibs, hemp seeds, flax seeds, chia seeds.

- 4 cups Rolled Oats (not instant)
- 1 cup Raw Almonds, chopped
- 1 1/2 cups Flaked Coconut
- 1/4 tsp Finely Ground Sea Salt
- 1/3 cup Liquid Honey (or Maple Syrup, Agave)
- 4 tbsp Coconut Oil (or Sunflower Oil, Ghee, or Butter)
